Texas Spoon Bread Recipe

• 3 cups Milk
• 1 1/4 cup yellow cornmeal
• 3 eggs, beaten
• 1 tsp butter
• 1 tsp sugar
• 1 tsp salt
• 1/4 tsp baking powder

Bring milk to a boil.  Stir in cornmeal, cook a few minutes until cornmeal has absorbed all the milk.  Set aside to cool for one hour.  Mixture will be firm.

Preheat oven to 375 degrees.  Lightly grease 1.5 quart casserole pan 

In a large mixing bowl, add the cornmeal mixture.  Stir in the eggs, butter, sugar, salt, and baking powder.  Place in greased casserole pan.  Bake for 35 minutes or until the edges are a light brown.

Serve with a spoon!
